Snag Chef Christina Tosi of Momofuku Milk Bar’s Secret Ingredient

At this weekend’s Meals & Wine Basic in Aspen, we caught up with the tremendous baker, cookbook writer and up to date James Beard award-winner who’s formally well-known for the addictive Compost Cookie (who knew that chocolate and butterscotch chips, potato chips, pretzels, graham crackers, and occasional grounds might be such nice associates)? Right here she holds forth on just a few of our burning culinary questions.

Final meal on earth? I’d go together with a bowl of cacio e pepe [cheese and pepper pasta] and a glass of pink wine. And it’s gonna finish with chocolate chip cookie dough.

Favourite gadget? My Sodastream. I aerate each white and pink wines as a result of I would like every little thing to be chilled and bubbly.

Favourite ingredient proper now? Milk powder. I put it in every little thing from cookies to bread dough. It’s my secret ingredient. You possibly can’t actually put your finger on it, it simply provides a tremendous dimension.
